REV-LOW EXHAUST HOODS- a unique breakthrough (patent pending) in hood technology that features the lowest UL approved exhaust air volumes for specific cooking equipment. The operating principle is more steady-state effluent capture as opposed to the standard “containment- then removal” design of standard hood designs. These hoods feature fixed extractors, in either dry or water-wash variations. Energy savings are achieved through less make-up air tempering costs, potentially smaller fans and smaller pollution control devices.

VARIABLE VOLUME EXHAUST HOODS- The majority of cooking is done in small window of time compared to the time that the kitchen is open. Both of these systems take advantage of that fact to reduce the exhaust air down to a minimal amount during the non-cooking periods. The TruFlow is the simpler of the two and utilizes a thermocouple in the duct collar to signal the fan rpm increase. It also features a manual push button that overrides the temperature sensor. It is activated by the cook if he notices smoke accumulating above the grill (thermal delay being too long to ramp up the rpm). Any hood system can be retrofitted with this system. A more sophisticated, but more costly system is the Melink system which utilizes an UV light sensor to monitor aerosols in the hood (smoke detection) and ramps up the rpm at the outset of increased smoke. This function basically replaces the manual/visual button of the TruFlow. Both are excellent alternatives to running a fan full speed all day and night. Of course, to benefit from the energy savings a dedicated kitchen HVAC/make-up air system must be fitted with variable frequency drives and interlocked to the supply fan.
